Description
The Red Mullet of Licosa is fished between Ogliastro Marina and Punta Licosa.
It is a reef Mullet and this gives its flesh a hint of sea grass.
Catches reach a maximum of 8 – 9 kg at a time.
Processing:
The mullets are carefully scaled and filleted.
The small quantities are placed in salt and reach maturity after a long time.
