Die in Öl eingelegten getrockneten Tomaten sind in Süditalien, insbesondere in Apulien und Kalabrien, sehr beliebt und eignen sich hervorragend als Vorspeise zu hausgemachtem Brot nach apulischer Art, aber auch zum Verfeinern von Fleisch- und Gemüsegerichten und leckeren Soßen. Reife, feste Perini-Tomaten eignen sich am besten zum langsamen Trocknen in der Sonne oder sogar im Backofen; durch die Verwendung von Salz verlieren sie ihr Vegetationswasser, wodurch sie sich leichter trocknen lassen und sich gut halten.
