Description
Bottarga is a product processed using ancient methods that consists essentially of artisanal sea salt
sea salt from the salt pans of Trapani and tuna roe, without the use of preservatives and
additives.
We obtain it from Albacore tuna from our coasts: we clean the tuna, taking care not to
not to break the eggs, we wash them gently and finally we put them under salt pressure
taking care to turn the roe at least once a day. Here, L’Oro del Mediterraneo
will mature for at least 90 days.
Tuna “bottarga” enriches fish and seafood dishes, vegetables, main courses, pizzas, pies, carpaccio and salads and seafood salads.
