whole fillets: hors d’oeuvres, pizzas, sauces for pasta dishes or the ever-popular bread with butter and anchovies.

Menaica anchovies are fished on calm sea days, between April and July, in the Cilento region.

The fishermen go out at sunset and spread their nets offshore, blocking their passage during the

night, using a special technique that derives from the centuries-old experience of the ancient

Greeks.
