Description
Sundried tomatoes in oil are a popular preserve in Southern Italy, particularly in Puglia and Calabria. They are ideal as an appetiser with slices of Pugliese-style bread, but can also be used to enrich and add flavour to a variety of meat and vegetable dishes and tasty sauces. The ripe and firm Perini tomatoes are the most suitable to be dried slowly in the sun or even in the oven; the use of salt helps them to lose their vegetation water, facilitating the drying process and ensuring a good preservation.
