Salame milanese

Il Salame Milano, detto anche Crespone (dal nome locale del budello utilizzato), è un tipo di salume originario del milanese, a base di carne di suino, manzo, pepe e spezie varie, dalla caratteristica grana fine.
Il salame, che solitamente ha un diametro compreso tra 6 e 11 centimetri, è caratterizzato da una macinatura a grana fine con le parti grasse e magre distribuite uniformemente con l’ausilio di un apposito attrezzo chiamato “finimondo”, una sorta di tritacarne che trita la carne molto finemente.
La pasta di salame viene poi insaccata in un budello naturale e lasciata stagionare dalle 3 alle 9 settimane a seconda del diametro del salame.
Simile nell’aspetto al salame ungherese, il salame Milano ha un gusto più dolce, più delicato e nessun odore di affumicato.
